Ipswich grandmother Vyleen White was with her 6-year-old granddaughter at the bottom of escalators in an Aldi carpark when she was stabbed and her car was allegedly stolen just after 6pm.
Officers found Mrs White with "life-threatening injuries" and she was declared dead at the scene after emergency services attempted to revive her, police said.
The 6-year-old granddaughter, who witnessed the attack, was uninjured, police said.
"She was such a selfless woman with so much care for her family and absolutely any one she came into contact with," friend of the family Katherine Lameree said.
"She would hold prayers for anyone who needed them in the moment of need. She would do this even the day of her passing," she said.
A GoFundMe fundraiser was started by Ms Lameree to collect donations for Mrs White's funeral expenses.
