Tamworth and Quirindi were set to host the championships in 2020 before COVID-19 saw them postponed until October 2021.
They have now been pushed back to the week starting November 21 in the hope most of NSW will be out of lockdown by then and teams able to attend.
Tamworth Veterans Cricket president Greg Kellett had his "fingers crossed" in the hope the championships would go ahead but said they would have to wait and see what happens around the state.
"We just had to come up with something so we moved a few things around with the president from NSW [vets cricket]," Kellett said.
If COVID-19 restrictions won't allow a state carnival to go ahead in that week in November, Kellett said the Tamworth vets would put on a carnival of a reduced capacity if allowed.
They did that in 2020 when they put on a friendly tournament.
"We put on that three-day carnival and that's a possibility again," Kellett said.
"If parts of NSW get out of lockdown, I'll put something out there.
"We've got the grounds booked and if they're [teams] available, want to come and are free of COVID, then they're most welcome.
He added: "We'll get everything in place and if we have to call it off, we call it off."

Tamworth's veteran cricketers have been training over winter in preparation for the upcoming season.
Kellett said whenever Tamworth comes out of lockdown they'll be back at the nets to get ready for matches to be played, hopefully, in September.
"I think our first game was planned for September 25," Kellett said.
"Central Coast or Newcastle wanted to come up here to have a game.
"We'll still work to that - if it's possible."
