"We're selling 1000 buns a day here and we do that at large markets in Sydney, it's astonishing we've got that feedback up here," Bao Brothers manager Allan Waring said at the time.
But while the Bao Brothers will be back, Pat's Lebanese Catering won't be dishing up kebabs in 2020.
Pat Burrows, of the catering business, posted a video to Facebook making the announcement.
"Unfortunately, I wont be able to do the kebabs this year due to the fires happening," Mr Burrows said in the video.
"I've chosen to help the community instead."
Mr Burrows works for NSW Fire and Rescue and will be putting his time into helping out with the fires where needed.
While the caterer said he won't make an appearance in 2020 he also had some good news for fans of his food.
"Next year [2021], 100 per cent, we're doing the kebabs," Mr Burrows said in the video.
Stallholders were busily setting up their stalls on Thursday.
Bao Brothers will be set up out the front of The Welder's Dog again this year. The majority of food stalls can be found down Fitzroy Street and in Bicentennial Park.
