Hosted at The Welder's Dog by the Tamworth BBQ Man Peter Bukowski the event has been sanctioned by the international Steak Cookoff Association, meaning the winner gets a ticket to compete at the world Championships in Fort Worth Texas.
Jack's Creek will be supplying the beef, with the sanctioning meaning all steaks need to be 32mm thick prime grade rib eye, although how it is cooked is up to the competitor.
"You have to bring your own cooking device, and seasoning is open slather," Mr Bukowski said.
"Steaks have to be cooked medium, because that is the hardest to achieve, while points are given for doneness, texture and flavour."

The Cookoff will be only the second stand alone event in Australia, and should attract a host of visitors to the city who are on the "steak cookoff circuit" chasing Australian championship points.
"The hardcore guys do go very hard and come with the full trailer, although big championships have recently been won with small charcoal grills," Mr Bukowski said.
"I have already had interest from people from Sydney, Bathurst and the Central Coast, but I would love to see a local come down and clean up."
Entry to the competition is $150 per steak, with the winner walking away with $750 and the World Championships entry.
The day will also include burger ancillary and chicken wings ancillary competitions, as well as the typically tantalising beer selection from the Welder's Dog team.
Spectator entry will be a gold coin, which will be donated to the steak winner's charity of choice.
Mr Bukowski is on the look-out for local judges, with anyone interested asked to contact him via the Tamworth BBQ Man Facebook page.
Mr Bukowski will also be running a Charcoal BBQ Cooking School at the Welder's Dog on March 9, before an Intro to Low and Slow Cooking and Smoking school on March 11.
